    Nitrite salt packaging 1 kg (food additive E250) is a regular crystallized purified salt containing sodium nitrite NaNO2. It is widely used in meat processing, in the production of smoked meats, sausages, and dry-cured products. It is also used in drying and smoking fish and making cheeses. Nitrite salt appeared on the market not so long ago.

    Before that, its functions were performed by food nitrate. But when using it, there was a huge disadvantage - it was necessary to strictly adhere to the dosage so as not to overdo it, since in case of an overdose, food nitrate is dangerous for the body. The essence of nitrite salt is that an overdose is impossible, since if you add more salt than required, the product will come out oversalted and no one will be able to eat it. Since the concentration of sodium nitrite is only 0.6%, this salt is absolutely safe. But this percentage of NaNO2 is enough for the nitrite salt to perform its functions.

    There are different methods for preventing caking and clumping in the production of nitrite salt. This is the addition of silicon dioxide (E551) or a small amount of moisture.

    What is the purpose of the E250 additive?
